Lemon yoghurt with blueberries

This is a simple dessert recipe that you can adapt to include other flavours and fruits such raspberries or pomegranate seeds. Delicious served with a ginger biscuit.

What you will need:

  • 60 ml plain, low fat Greek or soya yogurt 
  • 1/2 tablespoon lemon juice
  • 1 teaspoon of lemon zest
  • 1/2 tablespoon sugar
  • Handful of blueberries


1. Squeeze and grate the lemon

2. Mix the lemon with the sugar

  • Whisk in a bowl until the sugar has mostly dissolved

3. Combine the yoghurt, lemon juice mix and fruit

  • Add the ingredients together
  • Wash and add the blueberries
