Lemon chicken

This recipe cooks in under 30 minutes but you will need to marinade the chicken ahead of this cooking time.  Serve with a small portion of rice or a salad.

What you will need:

  • 2 boneless chicken breasts
  • For the marinade
  • 1 egg white
  • 2 teaspoon cornflour
  • Salt
  • 25 ml sesame oil
  • For the cooking sauce
  • 45 ml chicken stock
  • 2 tablespoons lemon juice
  • 1/2 tablespoon sugar
  • 1/2 tablespoon light soy sauce
  • 1/2 garlic clove
  • 1/2 red chilli (optional)
  • 1/2 tablespoon cornflour

Method:

1. Marinate the chicken

  • Combine the marinade ingredients, add to the chicken; leave for 20 min 

2. Pre-heat the oven

  • 180oC for a conventional oven or 160oC for a fan oven

3. Make the cooking sauce

  • Put the stock, lemon, sugar and soy together in a saucepan
  • Mince the garlic and add in
  • Add in chopped red chilli if using
  • Bring to the boil
  • Mix the cornflour with a little water and whisk into the sauce
  • Simmer for 1–2 min; remove from heat

4. Cook the chicken

  • Put the chicken on a non-stick baking tray and cook for 20 min
  • Remove from the oven and coat in the cooking sauce
  • Return to the oven and bake for another 10–15 min, or until the chicken is cooked through
