Chickpea, feta and avocado salad

This is a simple and quick to make salad that can be served as a starter or snack, or as part of a main meal. Leaving out the feta cheese makes this a vegan dish, or you can add in a little grilled chicken to make a larger meal. 

What you will need:

  • 200 g tin of chickpeas, drained
  • 1 ripe avocado, pitted, peeled and diced
  • 1 tablespoon fresh coriander, chopped
  • 1–2 spring onions, washed and chopped
  • 50-60 g feta cheese
  • 1/2 lime, juiced
  • Salt and pepper
  • Chilli flakes (optional)


1. Prepare the ingredients

  • Drain the chickpeas and place in a bowl
  • Cut the avocado in half on a chopping board, remove the stone and outer skin and dice
  • Wash and chop the coriander sprigs
  • Wash the spring onions, chop off the end and top section and chop finely
  • Cut the feta into bite-sized cubes

2. Combine and serve

  • Combine all the ingredients into a bowl, add the lime juice and salt and pepper to taste
  • For a little extra kick, sprinkle which chilli flakes when serving
